Advice on orchestal VSTs?

Well, I've tried and tried, but I just can't get my orchestra sounding realistic enough. Every note is struck individually and I have no idea how to correct that. It IS possible to create an awesome sounding orchestra with just VSTs, but I have no idea how. If someone can point me in the right direction with a link or give advice, I'd be grateful, even if it's just pointing towards a VST set that worked for you when composing an orchestra.
